Tell them you are a vegan, and the chef can do an amazing stuffed mushroom appetizer.
They understand veganism, but since there are a number of serves running around the restaurant, you may need to mention it more than once, though they are relatively communicative.
My waiter was very a very charming and intelligent vegetarian whose wife is a vegan.
